Chicken Medallions

A mousse of fresh, boneless and skinless chicken breasts, egg whites, and eggs.  Then, baked sweet potatoes (or yams), roasted red bell peppers, chicken liver and seasonal berries (blackberry, raspberry) are gently folded in.  This recipe is hand-formed, wrapped and slow-poached in a water-bath oven (Sous Vide), cooled and then sliced in to medallions.  Each medallion is separated with parchment-paper for easy serving.   Mouth watering, this one is a tail-wagging favorite!
